Dulce de Leche
Serving sizes
Dulce de Leche changes rating with portion size. Its rating is estimated from what it is made of, so the servings are described rather than weighed.
- Small serving
- Moderate serving
- Large serving
Dulce de Leche is High FODMAP, a caramel made by slowly cooking down sweetened milk until everything in it becomes concentrated.
- Because it's cooked-down sweetened milk, the lactose concentrates as the liquid reduces, so it sits low at a small serving, climbs to moderate at a moderate serving, and reaches high by a large serving.
- You'll find it drizzled, spread, or spooned into desserts, and since it's easy to pile on generously, the sweet servings most people reach for land in the high range.
A small spoonful for flavor keeps things gentler, or reach for a lactose-free caramel style spread when you want to be more generous.
Why dulce de leche is rated high
Dulce de leche is rated high FODMAP overall, and the reason is lactose. It is sweetened milk cooked slowly until most of the water is gone, and reducing milk this way leaves its lactose behind in a thick, concentrated caramel. This rating is estimated from what it is made of rather than measured at a set serving, and the portion ladder shows how quickly it climbs: a Small serving reads low, a Moderate serving reads moderate, and a Large serving reads high. Because it is so easy to spread and spoon generously, the amounts people usually reach for sit at the top of that ladder.
What changes your risk
- Serving size The ladder runs from low at a Small serving to moderate at a Moderate serving and high at a Large serving, so the amount on the spoon decides almost everything here.
- Reduction concentrates lactose Cooking milk down does not break lactose apart. It removes water, so every bit of dulce de leche carries more lactose than the milk it started as, and a thicker, longer-cooked batch is denser still.
- Stacking with other dairy Dulce de leche often lands on ice cream, in milky coffee, with whipped cream, or beside a soft cheese, and all of those carry lactose too. Together they can push a dessert past what the dulce de leche alone would.
- Made from lactose-free milk A version cooked down from lactose-free milk starts with the lactose already split by the lactase enzyme, so the same caramel flavour arrives without the lactose load.
Swaps
The cleanest fix is lactose itself: dulce de leche made from lactose-free milk, or a caramel sauce made from table sugar and lactose-free cream, gives the same sticky, toffee-like role. Lactose-free dairy is ordinary dairy with the lactase enzyme added, so it is not dairy-free and is not suitable for a milk allergy. For a quick drizzle without any dairy, maple syrup or rice malt syrup fill the sweet, pourable role over pancakes, oats or fruit such as strawberries and firm, just-yellow banana. Ordinary condensed milk, honey and agave syrup are not swaps here.
How to lower the load
Spoon dulce de leche into a small dish rather than eating straight from the jar, so the amount stays at the Small serving rather than drifting upward. If you are making it yourself, start with lactose-free milk and table sugar and cook it down the usual way. Check labels on caramel spreads and desserts sold as dulce de leche style, since many are built on ordinary condensed milk. When it tops a dessert, keep the rest of the plate lactose-light, for example with lactose-free yoghurt or fruit instead of ice cream or cream.
Common questions
is dulce de leche low fodmap
No, dulce de leche is rated high FODMAP overall, estimated from what it is made of. On its portion ladder a Small serving reads low, a Moderate serving reads moderate and a Large serving reads high, driven by lactose.
is dulce de leche high in lactose
Yes. It is milk and sugar cooked down until most of the water is gone, which concentrates the lactose rather than removing it.
can you make lactose free dulce de leche
Yes, cooking lactose-free milk with sugar gives the same caramel with the lactose already split by the lactase enzyme. It is still dairy, so it is not for a milk allergy.
what can i use instead of dulce de leche on a low fodmap diet
A caramel sauce made with table sugar and lactose-free cream fills the same role, and maple syrup or rice malt syrup work as a quick drizzle. Avoid ordinary condensed milk, honey and agave syrup as stand-ins.

Dulce de Leche is an estimated rating: it is inferred from the food's ingredients and composition and cross-checked, not measured directly in the papers below. The low, moderate and high cutoffs are still those of Varney et al. (2017).
