Apple Strudel

High FODMAP

Typical portion

  • Any typical portion High

Apple strudel is High FODMAP, a wheat pastry wrapped around a sweet apple filling that stacks two fermentable sugars in one bite.

  • The combination is what pushes it up: the apple filling brings Excess Fructose while the wheat pastry brings Fructans, so any typical portion lands high.
  • Most strudels follow this same build, though added dried fruit or extra sweeteners can pile on even more, so the filling and pastry together are what to watch.

If you're after that warm, spiced comfort, try baking a low-FODMAP fruit like firm strawberries or a slice of ripe banana in a certified gluten-free pastry instead.

Why apple strudel is rated high

Apple strudel is high FODMAP, and the reason is that it doubles up: the thin wheat pastry carries Fructans, and the cooked apple filling carries Excess Fructose. Its rating is estimated from what it is made of rather than from a measured serving, and the only rung on its ladder is "Any typical portion", which reads HIGH. There is no lower serving on the ladder to fall back on, so trimming the portion is not a strategy the data supports here.

What changes your risk

  • Two subgroups in one dessert The pastry and the filling each bring their own load, so a strudel cannot be fixed by changing only one half of it.
  • Baking does not help Baking softens the apple and crisps the pastry, but heat does not break down Fructans or Excess Fructose, and nothing drains away in the oven.
  • Added dried fruit Many recipes fold raisins or other dried fruit into the filling, and drying concentrates everything in the fruit, so these versions carry even more.
  • Stacking at the table Serving strudel with a drizzle of honey, a glass of apple juice, or alongside wheat bread earlier in the meal piles more Excess Fructose and Fructans onto a dessert that is already high.
  • Sweet sauces on the side Syrups and sauces poured over the top can bring their own FODMAPs, so the plate as served often ends up higher than the strudel alone.

Swaps

The warm, spiced, fruit-and-pastry feeling is easy to rebuild with lower FODMAP parts. Bake blueberries, raspberries or strawberries with cinnamon and a little table sugar or maple syrup inside a gluten free pastry, or swap the apple for pineapple or firm, just-yellow banana. A fruit crumble topped with oats, walnuts or pecans and butter gives a similar result without any pastry at all. Pear and stone fruit are not honest swaps for the apple, since they bring the same kind of fruit-sugar problem.

How to lower the load

Bakery and café strudels almost always use ordinary wheat pastry and apple, so ordering one out is not a workaround. At home, gluten free puff or filo style pastry handles a rolled fruit filling well if it is kept cold until it goes into the oven. Toss the berries with a little cornflour so the juices thicken instead of soaking the pastry, and season with cinnamon, nutmeg and lemon zest to keep the strudel character. Check bought pastry and fillings for honey, high fructose corn syrup, apple concentrate or inulin on the ingredients list.

Common questions

is apple strudel low fodmap

No. Apple strudel is high FODMAP, estimated from what it is made of, and "Any typical portion" reads HIGH, with no lower serving on its ladder.

is apple strudel high in fructose

Yes. The apple filling brings Excess Fructose, and the wheat pastry adds Fructans on top, which is why the strudel as a whole rates high.

can i eat apple strudel on the elimination phase

It is best left out during elimination, since there is no serving on the ladder that comes in lower than high. Reintroducing Fructans and Excess Fructose is something to work through with a dietitian.

what can i make instead of apple strudel

Wrap blueberries, raspberries or strawberries with cinnamon and maple syrup in gluten free pastry, or bake a berry crumble with an oat and walnut topping.
