Turkey Liver
Typical portion
- Any typical portion
Turkey liver is Low FODMAP, a pure organ meat that's all protein and fat with no fermentable carbs to stir up trouble.
- As protein and fat with negligible fermentable carbohydrate, turkey liver carries no FODMAPs and stays comfortable at any typical portion.
Cook it simply with a splash of garlic-infused oil and fresh herbs, and just keep an eye on any added marinades or sauces that could bring FODMAPs of their own.
Why turkey liver is rated low
Turkey liver is low FODMAP. On its own it is an organ meat made of protein and fat with negligible carbohydrate, so it brings nothing fermentable to the plate. The rating is estimated from what turkey liver is made of, not measured at a weighed serving, so the ladder simply reads "Any typical portion". Where turkey liver gets into trouble is the recipe: it is most often eaten as pâté, chopped liver or dirty rice, and those dishes lean hard on onion, shallot, garlic and cream.
What changes your risk
- Pâté and chopped liver These are the most common ways turkey liver is eaten, and the classic versions are built on shallot or onion, often with garlic and cream. The liver is low; the spread usually is not.
- Flour dredge Livers are often dusted in wheat flour before frying. That coating adds FODMAPs the liver itself does not have. Rice flour or a gluten free flour gives the same light crust.
- Dirty rice and stuffings Rice is low, but dirty rice and giblet stuffings usually start with onion, celery and garlic cooked down with the livers. Those carry the FODMAP load, not the liver.
- Pan sauces and stock Deglazing with an ordinary stock or a store-bought gravy adds whatever onion and garlic they contain. Cooking does not break FODMAPs down, and because the FODMAPs in onion and garlic are water-soluble they sit in the liquid itself.
- What sits beside it With no FODMAPs of its own, turkey liver adds nothing to a meal's total, so the toast, crackers or sides set the load. Liver on ordinary wheat toast with onion jam is a high FODMAP plate.
What else works
Chicken livers, plain turkey or chicken meat, beef, eggs and fish all sit at low FODMAP when cooked plainly. The lookalikes to watch are the prepared forms: shop-bought pâté and parfait, chopped liver, liver sausage, and terrines, which nearly always contain onion, shallot or garlic, and often cream. If you want a spread, a homemade pâté made with garlic-infused oil, chives, thyme and butter keeps the flavour without the onion, and it pairs well with gluten free crackers, rice cakes or traditional sourdough spelt bread instead of ordinary wheat toast.
How to keep it low
Turkey livers often come tucked into the giblet bag, or can be bought frozen in tubs; thaw them in the fridge and use them within a day or two. Trim off any green-tinged patches, which taste bitter, and the white connective bits, then pat the livers dry so they brown rather than steam. Cook them in butter or garlic-infused oil until they are cooked all the way through with no pink left inside, then take them off the heat straight away, since overcooking past that point turns them grainy. Finish with fresh sage or thyme and the green tops of spring onions rather than shallot, and if a recipe calls for a deglaze, use wine or a homemade stock you know is free of onion and garlic.
Common questions
is turkey liver low fodmap
Yes. Turkey liver is low FODMAP at Any typical portion, a rating estimated from what it is made of, protein and fat with negligible carbohydrate. The onion, garlic and wheat flour that often come with it are another matter.
is turkey liver pate low fodmap
Usually not. Most pâté recipes are built on onion or shallot and often garlic, which make the spread high FODMAP even though the liver itself is low. A homemade version using garlic-infused oil and chives avoids those.
can i eat turkey liver on the elimination phase
Plain turkey liver fits the elimination phase when it is cooked without onion, garlic or a wheat flour coating. Rice flour, garlic-infused oil and fresh herbs keep it within the diet.
what can i use instead of onions with turkey liver
The green tops of spring onions, chives or leek leaves give the same savoury lift. Garlic-infused oil adds garlic flavour without the garlic itself.

Turkey Liver is an estimated rating: it is inferred from the food's ingredients and composition and cross-checked, not measured directly in the papers below. The low, moderate and high cutoffs are still those of Varney et al. (2017).
