Drying removes water and concentrates whatever was added, so the seasoning on a dried strip counts for more than it looks like it should.
- The rest of the meal Low is per food, not per plate. Ostrich alongside a wheat roll, an onion gravy and a creamy sauce is a high FODMAP meal that happens to contain a low FODMAP steak, so build the sides with potato, rice, carrots or green beans.

A ready made ostrich casserole or pie is a different food from an ostrich steak, whatever the front of the pack says.
How to keep it low
Buy ostrich plain: fillet, steak or mince with no marinade, no glaze and a short ingredient list, and ask the butcher what is in anything pre seasoned rather than guessing from the label wording. Ostrich is very lean, so it cooks fast and is best seared hot and served pink, which also means it needs fat rather than sauce for flavour. Garlic-infused oil in the pan, a squeeze of lemon and fresh herbs give a rich finish with nothing fermentable added. If you are making a sauce, build it from the pan juices with a splash of red wine and a little cornflour instead of a stock cube. Ordering out, ask for the steak plain with the sauce on the side, since that one request removes the most likely problem on the plate.
