Why multigrain bread is rated moderate
Multigrain bread is not the gentler loaf its name suggests. Fructans from the grain in it put it at moderate at 2 slices (68g), which is the sandwich most people would make without thinking, and it turns high at 2⅔ slices (90g). The extra grains, seeds and dark crust are not what decides the rating, the flour is, and adding seeds to a wheat loaf does not take fructans out of it. What makes this one worth watching is the narrow gap: there is barely two thirds of a slice between the moderate rung and the high one, so a thicker bakery cut can move it without a single extra slice being added.
What changes your risk
- Slice size, not just slice count 2 slices (68g) is moderate and 2⅔ slices (90g) is high. A thick hand cut slice from a bakery loaf weighs more than a thin supermarket one, so the same two slice sandwich can land on a different rung depending on the loaf.
- Stacking with other fructan foods because it starts at moderate, it is already using up room before anything else arrives. Wheat crackers, a wrap, rye bread, or onion and garlic in the dressing or filling within the same meal push the fructan total higher fast.
- Traditional sourdough fermentation a long, slow sourdough fermentation lets the starter break down much of the fructan in wheat and spelt flour, which is why traditional sourdough loaves are handled differently from ordinary yeasted bread. A quick loaf sold as sourdough flavoured has not been fermented that way and is not the same food.
- Seeds and grains on the crust are cosmetic here sunflower seeds, oats or cracked grain on top do not lower the fructan load of the flour underneath. A loaf looking wholesome is not a rating.
- Toasting and freezing do nothing to the load heat does not break fructans down and freezing does not either. Freezing pre sliced bread is still worth doing, because it makes taking out exactly two slices the easy option.
Swaps
For the same sandwich role without the fructan load, gluten free bread, traditional sourdough spelt bread and traditional sourdough wheat bread are the honest swaps. When you want a bigger grain portion at a meal, move away from bread entirely: rice, oats, quinoa, polenta, buckwheat, potato and gluten free pasta all carry a meal better than a larger bread serving will. Do not treat rye bread, wheat wraps, bagels or wheat crackers as a lighter option, they are the same fructan problem in another shape. Wholemeal bread has its own tested ladder and is not interchangeable with this one, so check it rather than assuming.
How to lower the load
Weigh two slices of your usual loaf once, because that tells you whether a sandwich is sitting near the tested 2 slices (68g) or drifting toward the 2⅔ slices (90g) rung. Building the filling up and adding a side salad makes a lunch at 2 slices (68g) eat like more food without more bread. Buy thin sliced rather than bakery cut, freeze the loaf and take slices out individually. In cafes and delis assume the bread is thicker and the sandwich is doubled, so having the filling as a salad, or asking whether gluten free bread is available, is the more reliable order. Watch the spread and the relish as closely as the bread, since onion and garlic ride in there.
