Manchego is already one of the easy ones, and if it is hard to find, the other aged cheeses fill the same role: cheddar shaves well for a sandwich, parmesan works wherever a salty finish is wanted, and swiss melts cleanly. The lookalikes to be wary of are fresh and soft cheeses that are sometimes shelved right next to it, including ricotta, cottage cheese and cream cheese, plus ordinary yoghurt based dips on the same platter. If a recipe wants a pourable dairy to go with the cheese, lactose-free milk and lactose-free cream are the straightforward option. They are ordinary dairy with the lactase enzyme added, so they are not dairy-free and are not suitable for anyone with a milk allergy.
How to keep it low
Buy Manchego as a plain wedge with the rind on rather than pre-shredded or pre-flavoured, since shredded mixes often carry anti-caking agents and seasoning blends that can hide onion or garlic powder. Keep it wrapped in waxed or parchment paper rather than plastic film so the paste does not sweat, and cut the rind away at the table rather than eating it. For a tapas board, plate the cheese with foods already on the low list, such as grapes, olives in plain brine, cucumber, bell pepper strips and gluten free crackers, and keep the membrillo and the garlic sausage off it. Ordering out, ask for Manchego shaved over a salad rather than folded into a creamy dressing, because the dressing is the unknown.
