Graham Bread

High FODMAP

Serving sizes

Graham Bread changes rating with portion size. Its rating is estimated from what it is made of, so the servings are described rather than weighed.

  • Small serving Moderate
  • Moderate serving High
  • Large serving High

Graham bread is High FODMAP, since it's a wheat-based bread that carries the fermentable carbs common to most wheat loaves.

  • The fructans from wheat flour build up as portions grow: a small serving sits at moderate, while a moderate or large serving climbs to high.
  • Graham bread comes in many styles, and toppings or added ingredients can shift the picture, but the wheat flour base is what really drives the level here.

When you want toast without the fructan load, a certified gluten-free bread or one made from rice or oats keeps things comfortable.

Why graham bread is rated high

Graham bread is high FODMAP. It is made with graham flour, a coarse whole wheat flour, and wheat carries fructans, the subgroup behind this rating. The rating is estimated from what the bread is made of rather than from a measured serving, and the ladder climbs quickly: a Small serving reads MODERATE, while a Moderate serving and a Large serving both reach HIGH. Even the lowest step on the ladder is not low, and anything beyond a Small serving is firmly high.

What changes your risk

  • Serving size The ladder turns early. A Small serving is MODERATE, and by a Moderate serving graham bread is already HIGH. There is no rung where it reads low.
  • Fermentation A long, traditional sourdough fermentation lets the starter break down much of the fructan in wheat, which is why traditional sourdough wheat or spelt bread is treated differently. Graham bread is normally an ordinary yeasted loaf, and a quick loaf sold as "sourdough flavoured" does not get that benefit either.
  • Stacking with other wheat Fructans add up across a meal. Graham bread eaten alongside graham crackers, wheat pasta, a wheat wrap or a wheat or rye breakfast cereal pushes the fructan total higher still.
  • Toasting and freezing Heat and cold do not break down fructans, so toasted, frozen or day-old graham bread carries the same load as a fresh loaf.
  • Spreads and fillings Honey and spreads made with onion or garlic add their own load on top of the bread, while eggs, cheddar, plain chicken and maple syrup do not add to the problem.

Swaps

For toast and sandwiches, a gluten free bread does the same job without the wheat fructans, and traditional sourdough spelt or wheat bread is another option because of that long fermentation. For the nutty, wholegrain flavour graham bread is known for, oat porridge or buckwheat porridge brings a similar earthiness to breakfast in place of toast. The lookalikes are not swaps: graham crackers, whole wheat, wholemeal, rye and multigrain loaves are all wheat or rye based and bring the same fructan problem.

How to lower the load

Graham bread is often sold simply as whole wheat or wholemeal bread, so check the ingredient list: wheat or graham flour near the top tells you what you are dealing with. During the elimination phase, keep a gluten free loaf or a traditional sourdough spelt loaf sliced in the freezer so a low FODMAP option is ready when you would otherwise reach for graham bread. If graham bread does end up on the plate, keep it to a Small serving, fill it with low FODMAP foods such as eggs, cheddar or plain chicken, and leave other wheat foods off the same meal. The issue here is the fructan in the wheat, which is why gluten free bread, made without wheat, rye or barley, works as a swap.

Common questions

is graham bread low fodmap

No. Graham bread is rated high FODMAP overall because it is made from wheat flour, which carries fructans. A Small serving reads MODERATE, and a Moderate serving is already HIGH.

is graham bread high in fructans

Yes. The wheat in graham flour carries fructans, and that is the subgroup driving its high rating.

can i eat graham bread on the elimination phase

It is best swapped out during elimination, since no step on its ladder is low. Gluten free bread or traditional sourdough spelt bread fills the same role.

does toasting graham bread lower the fodmaps

No. Toasting does not break down fructans, so toasted graham bread carries the same load as untoasted.

Graham Bread is an estimated rating: it is inferred from the food's ingredients and composition and cross-checked, not measured directly in the papers below. The low, moderate and high cutoffs are still those of Varney et al. (2017).
