- The rest of the plate A low rating is per serving, not per meal. Duck brings no subgroup of its own, so the total FODMAP load of the meal is set by the pancakes, the stuffing, the sides and the sauce around it.

Plain chicken, turkey, pork, beef and fish behave the same way on this diet, and eggs or firm tofu fill the protein slot on a meat-free night. The duck products worth treating differently are the processed ones: duck sausages and pâtés usually carry onion and garlic, crispy aromatic duck arrives with wheat pancakes and a hoisin-style sauce, and duck-fat roast potatoes are only as safe as the seasoning they were tossed in. The fat itself is fine, since FODMAPs are water-soluble and do not dissolve into oil, as long as no solid onion or garlic pieces are left in it.
How to keep it low
Buy duck plain rather than pre-marinated, since the marinade is the part that changes the answer. A whole bird or a pack of breasts with nothing on the label but duck gives you full control. Score the skin, season with salt, pepper and herbs, and build flavour from things that are already low: orange zest, thyme, star anise, ginger, maple syrup, chives, and garlic-infused oil in the pan sauce instead of a crushed clove. When roasting a whole duck, stuff the cavity with citrus and herbs rather than onion. Ordering out is the harder case, because the classic restaurant treatments are the ones with onion and garlic underneath; asking for the duck plain with the sauce on the side is a simpler request than asking for the sauce to be rebuilt.
