For the cauliflower rice role, plain white rice, quinoa and polenta all take a sauce the same way, and grated carrot or finely chopped zucchini stirred through rice gives the same flecked, vegetable heavy look. For a creamy mash, potato mashed with lactose free milk and a hard cheese such as cheddar or parmesan gets to the same place, and for the roasted tray role, zucchini, bell pepper, carrots and green beans brown well at the same temperature. A gluten free pizza base fills in for a cauliflower crust. Broccoli is often assumed to be interchangeable, but it is a different food with its own tested servings, so check it rather than treating it as a free swap.

How to lower the load

Read frozen vegetable bags carefully, since cauliflower rides along in mixed florets, stir fry blends and riced vegetable packs, and it is often the bulk ingredient in the ones sold as low carb. In restaurants, cauliflower shows up as a whole roasted centrepiece, in curries, in creamy soups and as buffalo style bites, so ask what the vegetable side actually is rather than assuming it is a mix. At home, cook cauliflower for the rest of the household in its own pan and keep the roasting tray separate, because the cooking liquid and the pan juices carry mannitol into whatever else is in there.
