How to lower the load

Gluten free pasta goes from firm to soft much faster than wheat pasta, so taste it a minute or two before the packet says and drain it as soon as it is al dente, then toss it straight into the sauce rather than letting it sit in the colander. Cook it in plenty of well salted water and keep a little of the cooking water to loosen the sauce. When you shop, read jarred sauce labels for onion, garlic, onion powder and garlic powder, and keep a bottle of garlic-infused oil by the stove so the flavour base is always there. Ordering out, ask whether the gluten free pasta can come with olive oil, tomato and parmesan rather than the house sauce.
