Turbot

Low FODMAP

Typical portion

  • Any typical portion Low

Turbot is Low FODMAP, a plain fish that's pure protein and fat with nothing fermentable to trouble your gut.

  • As a plain white fish, turbot has negligible carbohydrate and no FODMAPs, so it stays comfortable at any typical portion.

Keep it simple with lemon, herbs, and garlic-infused oil rather than a garlic or onion sauce, and it stays gentle on your gut.

Why turbot is rated low

Turbot is low FODMAP and stays low at Any typical portion. It is a plain white fish, which means flesh made of protein, water and fat with almost no carbohydrate, and since every FODMAP is a carbohydrate there is nothing in a fillet for the gut to ferment. No subgroup is recorded for it. That rating is estimated from what the fish is composed of rather than from a weighed tested serving, which is why the ladder here reads in words rather than amounts. What that also means is that the verdict stops at the edge of the fillet. Turbot is classically served in butter and cream sauces, with breadcrumbs, or on a bed of something rich, and the plate around it is what decides how the meal actually sits.

What changes your risk

  • The sauce, not the fish A larger fillet of plain turbot behaves the same as a small one, because there is no fermentable carbohydrate to scale. A classic beurre blanc built on shallots, a cream sauce, or a garlic butter does change the picture, and shallot is onion by another name.
  • Crumb, batter and flour Coating turbot in wheat breadcrumbs, dredging it in ordinary flour or deep frying it in batter adds wheat to a food that had none. Gluten free breadcrumbs, polenta or a light dusting of rice flour give the same crisp edge.
  • Fish stock and ready made bases Poaching liquid, fish stock cubes and bought fish pie sauces very often lead with onion and celery. Poach turbot in water with lemon, bay, parsley stalks and white wine instead, and the flavour is cleaner anyway.
  • Stacking across the plate Low is per food, not per meal. Turbot beside a wheat roll, a creamy gratin and an onion heavy dressing makes a high FODMAP meal from a low FODMAP fish, so pair it with potato, rice, green beans, carrots or zucchini.
  • Garlic flavour the safe way Fructans do not dissolve into oil, so garlic-infused oil gives turbot that garlic note without them. Chives and the green tops of spring onions do the same job as a finishing herb.

What else works

Nothing needs replacing here, so the point is what keeps it company. Other plain fish and seafood sit in the same place: cod, haddock, sole, plaice, salmon and plain prawns are all low at their tested servings when they arrive unsauced. The lookalikes to watch are turbot in other forms rather than other fish. Breaded or battered turbot brings wheat, smoked and marinated preparations bring their own seasoning blends, a turbot fish pie brings both a cream sauce and a flour based roux, and anything described as being served in garlic butter is a fructan delivery system. Restaurant fish stews and bouillabaisse style broths are built on onion and celery almost without exception.

How to keep it low

Buy turbot as a plain fillet or on the bone from the counter rather than pre sauced or crumbed from the freezer, and check the ingredient list on anything that arrives already dressed. It is a firm, meaty flat fish that holds together well, so it suits roasting on the bone, pan frying in garlic-infused oil, or gentle poaching. Season it simply with lemon, salt, pepper, parsley, dill and chives, and finish with a spoon of the pan juices rather than a bought sauce. If you want richness, butter melted with lemon and herbs works without adding anything fermentable, and shallots can be left out of a classic butter sauce and replaced with a splash of white wine vinegar. Eating out, ask for it grilled or pan fried plain with sauce on the side and the vegetables steamed rather than dressed.
