A squeeze of lemon, plain mayonnaise or a dip built on garlic-infused oil, chives and herbs gives you the same finish without the garlic solids.
How to keep it low
Fresh squid wants either a very fast sear or a long slow braise, since anything in between turns it rubbery. Buy tubes and tentacles cleaned, keep them cold and dry them well before they hit the pan so the coating sticks. For a fried version at home, toss the rings in cornflour or a gluten free flour with salt and pepper rather than wheat flour, and fry in plain oil. Ordering out, ask for it grilled rather than battered and ask for the sauce on the side, because the house dip is almost always garlic based. Lemon, parsley and a strained garlic-infused oil do the same work at the table.
