Ordinary wheat bread, rye bread, wheat wraps, pita and naan are not substitutes for this loaf. Neither is a supermarket multigrain or "ancient grain" loaf that simply adds seeds to a wheat base, and a loaf with inulin or chicory root fibre added is another thing again.

How to keep it low

Turn the pack over and read the flour order, because the front of the bag will lead with spelt whether it is a quarter of the flour or all of it, and the two are different entries here. Buy sliced rather than cutting your own if you want the serving to stay consistent, and weigh two slices once so you know how your usual loaf's cut compares to 2 slices (52g). If you eat bread twice in a day, spreading the slices across breakfast and lunch keeps the load easier to manage than putting them all into one sitting. Keep the loaf frozen and toast from frozen when you buy more than you will eat in a few days, since freezing does not change the FODMAP content but does save the rest of the loaf.
