Red Snapper

Low FODMAP

Typical portion

  • Any typical portion Low

Red snapper is Low FODMAP, a plain fish that's pure protein and fat with nothing fermentable to trip you up.

  • With negligible carbohydrate, red snapper carries no FODMAPs and stays comfortable at any typical portion.

Season it with herbs, lemon, and garlic-infused oil to keep the whole plate easy on your gut, and remember that heavy sauces or marinades can change the picture.

Why red snapper is rated low

Red snapper is low FODMAP. It is a white fish made of protein and fat with no meaningful carbohydrate, so there is nothing in the fish itself to raise the rating. The rating is estimated from what red snapper is made of rather than from a measured serving, and the portion guide reads "Any typical portion": LOW. Snapper is rarely served plain, though. Blackening rubs, Veracruz-style tomato sauces, curry pastes and wheat batters are where onion, garlic and wheat get onto the plate, and those decide the rating of the dish.

What changes your risk

  • Seasoning rubs Blackened, Cajun and many shop-bought fish seasonings rely on garlic powder and onion powder. Mix your own from paprika, cumin, dried thyme, oregano, salt and pepper.
  • Sauces and braising liquid Veracruz-style sauce, curries and stews start with onion and garlic. Their FODMAPs are water soluble, so they leach into the sauce and stay there even if the pieces are picked out, and cooking does not break them down.
  • Batter and crumb Fried snapper coated in wheat flour batter or breadcrumbs carries wheat. Rice flour, gluten free breadcrumbs or polenta make a crisp coating instead.
  • Whole fish stuffed with aromatics Whole snapper is often baked with onion and garlic in the cavity, and their juices run into the flesh. Fill the cavity with lemon, dill, parsley and the green tops of spring onions instead.
  • Stacking the meal Fish tacos with wheat tortillas, garlic crema and pickled red onion can add up to a high load even though the snapper in them is low. The rating covers the fish, not the meal.

What else works

Other plain white fish sit in the same place for the same reason: cod, barramundi, sea bass, grouper and tilapia are all protein and fat and come in low when cooked without onion or garlic. The lookalikes that are not reliably low are the prepared versions: blackened fish with a shop-bought rub, battered or crumbed fish, fish cakes bound with onion and breadcrumbs, and snapper in curry or Veracruz sauce. For flavor without the aromatics, garlic-infused oil, chives, lemon, fresh herbs and a pinch of asafoetida all work well with snapper's mild, sweet flesh.

How to keep it low

Buy snapper with bright, firm flesh, or a whole fish with clear eyes, and cook it within a day or two. Bake it in a parcel with zucchini, bell pepper, lemon and garlic-infused oil, or pan-fry it skin side down until crisp and finish with chives and lemon juice. Serve it with rice, potato or quinoa and green beans or bok choy. For fish tacos, use corn tortillas, a shredded carrot and cucumber slaw, and a lime and lactose-free yoghurt sauce. When ordering out, ask for the snapper grilled with oil and lemon and the sauce on the side, since the sauce is where onion and garlic usually hide.
