Kent (Japanese) pumpkin is Low FODMAP at ⅓ cup (75g), moderate at ⅔ cup (162g) and high at ¾ cup (206g), from its Fructans.
- Kent, Japanese or kabocha pumpkin is low at ⅓ cup (75g), turns moderate at ⅔ cup (162g) and is high at ¾ cup (206g).
- The FODMAP is Fructans, and they build with the portion, so pumpkin works best as one part of a plate rather than the whole of it.
- Canned pumpkin purée has its own entry, and butternut is a different squash with different serves.
Roast about ⅓ cup (75g) per person and fill out the plate with rice, potato or other low vegetables.
