Porcini

High FODMAP

Serving sizes

Porcini changes rating with portion size. These are the amounts tested in the literature behind our ratings.

  • About 2 tablespoons (10g) Low
  • Larger portions Moderate
  • Much larger portions High

Porcini are High FODMAP at a usual serving, though about 2 tablespoons (10g) is low, driven by Mannitol.

  • Only about 2 tablespoons (10g) is low.
  • Mannitol builds as you eat more, so larger portions are moderate and much larger portions are high.
  • Drying concentrates the mushroom, so dried porcini are easy to overdo.

Use a small amount for deep flavor, or a splash of mushroom-infused oil to bring the taste while leaving the mannitol behind.
