  • Batter and crumb A wheat flour batter or breadcrumb coating wraps the fillet in something that is not low FODMAP, and a breaded frozen fillet arrives that way. A gluten free crumb, polenta, or rice flour keeps the coating in line with the fish.
  • The sauce it arrives in Garlic butter, a white wine and shallot sauce, and most creamy sauces are built on onion or garlic, and a creamy one may also bring cream. Lemon, herbs, capers, butter and pepper do the same job without any of that.
  • Stock and chowder bases Fish stock, bouillon cubes and chowder bases routinely list onion and garlic, and the fish soaks in that liquid for the whole cook. Perch poached in plain water or a homemade stock without those ingredients stays where the rating puts it.
  • Cooking fat Cooking the fillet in garlic-infused oil gives you the garlic flavour without the FODMAPs, because what makes garlic a problem dissolves in water and not in oil. That only holds while no solid pieces of garlic are left sitting in the oil.
  • The rest of the plate A low rating applies to the fish, not the meal. Perch with wheat pasta, a creamy mushroom side and a bread roll is a heavy FODMAP dinner built around a food that carries none.

What else works

Perch needs no replacing, and the same is true of plain fish generally, so trout, cod, haddock and salmon all fill the role, as do eggs, plain chicken and firm tofu when you want a change. What does not carry over is the fish in another form: beer battered perch, crumbed frozen fillets, perch in a garlic cream sauce, seafood chowder, and fish pies made with a roux and stock. Potato, rice and polenta make reliable partners, and green beans, zucchini, carrots or a bell pepper salad round out the plate without adding anything fermentable.

How to keep it low

Buy plain fillets, fresh or frozen, and check that the frozen packet lists fish and perhaps salt rather than a batter, crumb or sauce. Cook it simply by grilling, baking in parchment or pan frying in plain oil, butter or garlic-infused oil, and finish with lemon, parsley, dill, chives or the green tops of spring onions rather than a sauce base. Ordering out, ask for it grilled rather than fried and ask what goes into the sauce, because restaurant fish is very often finished in garlic butter, and request plain butter and lemon instead.
