Halibut

Low FODMAP

Typical portion

  • Any typical portion Low

Halibut is Low FODMAP, a plain fish that's pure protein and fat with nothing fermentable in the mix.

  • Plain halibut carries no FODMAPs at all, since it's essentially protein and fat with negligible carbohydrate, so any typical portion sits comfortably low.

Grill, bake, or pan-sear it and season with herbs, lemon, or garlic-infused oil to keep the whole plate easy on your gut.

Why halibut is rated low

Halibut is low FODMAP. The rating is estimated from what it is made of rather than a measured serving: the fish is lean protein with a little fat and no fermentable carbohydrate recorded, so "Any typical portion" comes in low. A plain fillet is about as straightforward as a low FODMAP plate gets. What moves a halibut dinner away from low is almost always the coating, the sauce or the liquid it was cooked in, not the fish.

What changes your risk

  • Batter and crumb Fish and chips style batter and breaded fillets are usually made with wheat flour. Rice flour, cornflour or gluten free crumbs keep the coating low.
  • Butter sauces and salsas A classic beurre blanc starts with shallot, and many fish salsas and relishes use red onion or garlic. Lemon, capers, dill and garlic-infused oil do the same job.
  • Poaching liquid Onion and garlic flavour dissolves into a court bouillon or broth. If the fish is poached in one, avoid spooning that liquid back over it or reducing it into a sauce.
  • Fish cakes and pies Halibut in fish cakes, chowder or fish pie typically comes with onion, wheat flour and ordinary milk or cream. Those dishes are not low just because the fish is.
  • The whole meal A low rating applies per serving, not per plate. Battered fish with tartar sauce made with onion, mushy peas and a wheat roll can stack into a meal that is not low.

What else works

Other plain white fish sit in the same low place and swap in easily: cod, haddock, hake, snapper, sole and barramundi, along with salmon, trout and prawns. The lookalikes that are not reliably low are battered or crumbed frozen fillets, fish fingers, ready made fish cakes and fish pies, and seafood chowder, which usually bring wheat, onion or milk. Serve halibut with potato, rice or quinoa and green beans, bok choy or zucchini rather than a creamy sauce.

How to keep it low

Buy fresh or frozen fillets that list only the fish. Halibut is lean and dries out quickly, so pan-sear it in garlic-infused oil and a little butter, or bake it with lemon, dill, capers and a splash of white wine. For a crisp coating, dust it in rice flour or cornflour seasoned with paprika. If you make a sauce, start it with the green tops of spring onions or chives instead of shallot, and use lactose-free cream or a butter and lemon emulsion. Freeze individual fillets so one portion is easy to thaw.

Common questions

is halibut low fodmap

Yes. Plain halibut is rated low at "Any typical portion", estimated from it being protein and fat with no fermentable carbohydrate recorded.

is battered halibut low fodmap

Usually not as served, because standard batter is made with wheat flour. A rice flour or cornflour coating keeps it low.

is poached halibut low fodmap

The fish itself stays low however it is cooked. If the poaching liquid contains onion or garlic, that flavour sits in the liquid, so do not pour it over the fish or reduce it into a sauce.

what sauce goes with halibut on a low fodmap diet

Lemon and butter with capers and dill, a salsa verde made with garlic-infused oil and chives, or a lactose-free cream sauce all keep the plate low.
