Grana Padano sits in the same low FODMAP company as parmesan, cheddar and swiss, and any of them can do the grating job in a gratin, a risotto or a bowl of pasta. The lookalikes that are not low are the fresh and soft cheeses that often share the same shelf: ricotta, cottage cheese, cream cheese and mascarpone. Ordinary milk and cream are not low either, so a cheese sauce thickened with milk is a different question from the cheese. If the aim is savoury depth rather than dairy specifically, garlic infused oil and the green tops of spring onions give a similar lift to a finished dish.
How to keep it low
Buy a wedge with the rind on rather than a tub of pre grated cheese or a cheese blend, and grate it as you need it. The wedge keeps well wrapped in paper inside a loose plastic bag in the fridge, and its dryness is why it lasts. Grate finely rather than coarsely: a fine grating spreads further over a plate, so the portion looks generous while staying easily within a typical one. Keep the rinds in the freezer for soups. When you are ordering out, the cheese is rarely the thing worth asking about, so spend the question on whether the sauce or the risotto base starts with onion and garlic.
