Polenta covers the soft, comforting side, buckwheat works in a warm grain bowl, and gluten free pasta stands in when the dish wants something more substantial. Build the flavour with garlic-infused oil, the green tops of spring onions, chives, lemon, parsley and mint so the dish still tastes the way you wanted it to. What is not a swap: wholewheat couscous, pearl or giant couscous, bulgur, freekeh, ordinary wheat pasta, wheat crackers or bread, because they are all carrying the same fructans.

How to lower the load

The couscous trap is usually someone else's kitchen. Deli counters, salad bars, mezze platters and catered lunches lean on couscous because it is cheap and holds up well, and it hides under grilled vegetables where it is easy to miss until the bowl is half eaten. Ask what the base is before you order a salad described as a grain bowl or a tabbouleh, and ask for rice or quinoa instead where the kitchen can swap it. At home, keep cooked rice or quinoa in the fridge so there is a base ready when you would otherwise reach for the quick option, since couscous is often chosen for speed rather than taste. Read packet labels carefully too, because flavoured couscous mixes almost always list onion and garlic powder alongside the wheat.
