Dutch Baby (German Pancake)
A low FODMAP Dutch baby with eggs, lactose-free milk, and gluten-free flour baked puffy in a hot buttered skillet, served with lemon, powdered sugar, and strawberries.
Ingredients
Batter
- 4 large eggs, at room temperature
- 2/3 cup (160 ml) lactose-free milk, at room temperature
- 2/3 cup (95 g) gluten-free flour blend (with xanthan gum)
- 1 tablespoon granulated sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon fine salt
- 3 tablespoons (42 g) unsalted butter
To serve
- 1/2 lemon
- 1 tablespoon powdered sugar
- 20 medium strawberries (260 g), sliced
- Pure maple syrup, up to 1 tablespoon per person
Instructions
Heat the pan
- Set a 10- or 12-inch cast-iron skillet on the middle rack and heat the oven to 425°F (220°C) with the skillet inside, at least 15 minutes.
Batter
- Blend the eggs, milk, flour blend, sugar, vanilla, and salt in a blender for 20 seconds, until smooth and frothy. Let it rest while the oven heats.
Bake
- Using oven mitts, take out the hot skillet, add the butter, and swirl until it melts and foams.
- Pour in the batter all at once and return the skillet to the oven right away.
- Bake 18 to 22 minutes without opening the oven, until puffed high, deep golden at the edges, and set in the center.
- Squeeze the lemon over the top, dust with powdered sugar, and cut into 4 wedges. Serve right away with the strawberries and maple syrup.
Tips & Substitutions
- Room temperature ingredients. Cold eggs and milk give a flatter pancake.
- It will fall. The puff settles within a few minutes of leaving the oven; the texture stays custardy in the middle and crisp at the edges.
- Dairy-free. Use unsweetened almond milk and dairy-free butter with no cashew or inulin on the label.
- Other fruit. Use 1 cup (125 g) of blueberries per person or sliced kiwi instead of strawberries.
- Smaller pan. In an 8-inch skillet, halve the recipe and bake 15 to 18 minutes.
